1/4-1/2 cup cooked quinoa
1/2 cup fresh spinach
1/4 onion
1 fresh whole eggs
2 egg whites
1/4 ripe avocado
1 tsp coconut oil


  1. Heat coconut oil in sauté pan over medium-high heat
  2. Chop the ¼ onion into size of your choice
  3. Begin to sauté onion in pan. Adding pepper or other seasonings to taste
  4. Once onions are soft and lightly browned, add in the spinach and continue stirring for approx 1min
  5. In a separate bowl, beat whole egg and add egg whites until mixed
  6. Add egg mixture to vegetable mixture to cook
  7. Continue stirring and mixing the eggs and veggies
  8. Place cooked quinoa in a bowl. Once eggs are cooked, top quinoa with the mixture
  9. Slice the avocado and place it on top of the bowl
  10. Top with your favorite spices, hot sauces or salsa!
